Red Quinoa Salad

Good for you and good to eat.
A pretty simple recipe:
Take 1 tablespoon honey and whisk it with 2 tablespoons good olive oil, 1 tablespoon cider vinegar. Pour that over 2 cups cooked red quinoa, 1/2 cup chopped spinach, 1 tablespoon minced cilantro, 1 minced shallot, 1/4 cup slivered almonds, 5 dates (pitted and chopped), 8 dried apricots (chopped). Add salt and pepper to taste, maybe a squig of lemon juice. Add more olive oil if you wish. Toss until everything is uniformly coated in dressing. Chill in the fridge or keep at room temperature. It’s great either way. 
Eat as a side dish with maybe some grilled fish or something similar. It’s a great way to get your fiber and eat healthy and well.
