A couple of days ago I made a pretty great salmon burger and served it on a buttered and griddled potato bread roll with a Meyer lemon-caper aioli, lettuce & very thinly sliced red onion. Served it with homemade waffle fries dusted with bay spice.

1 lb salmon filet, chopped into a large dice.
Take fish and pulse in a food processor a few times until roughly the consistency of large-grind hamburger.
Remove chopped fish to a mixing bowl and with your hands add and combine salmon with chopped cilantro and green onions, minced ginger, one egg white, salt and pepper, a pinch of ground coriander, a pinch of sugar, a pinch of curry powder, a little grated lime zest, and a couple dashes of sesame oil.
Form into two patties and refrigerate for about twenty minutes. Cook in a well-oiled skillet like a hamburger.
