This is a very easy salad. I hacked up chunks of ripe watermelon and tossed it with some cleaned watercress, some Mexican fresh cheese, a little bit of torn mint, and toasted pumpkin seeds (pepitas). The dressing is super easy. One tablespoon of honey, two tablespoons of white wine vinegar, three tablespoons of extra virgin olive oil, a little kosher salt, and some cracked pepper.
Very refreshing, very fun, very tasty!
