Red Ginger Recollection

From April 2006 to January 2007 I was Executive Chef and Co-Owner of Red Ginger Pan-Asian Grill in El Granada, California. El Granada is just a couple miles north of Half Moon Bay and twenty-two miles south of San Francisco. Despite some enormous set-backs and major calamities (which I will not enumerate here), I am proud of the work we did there. We put out great food, created a lovely space, and cultivated a fantastic vibe. We endeavored always to put the best product we could out there, whether it was something as simple as a potsticker or something as carefully nuanced as the basil soju martini.

Tuna tartar with wonton crisps, avocado, wasabi cream.

It was often grueling, but we worked hard, we played hard, we had a great time. We created something that I hope touched a few people’s lives, however briefly, for the better.

My old partner Stevan dug up some pics, which haven’t seen the light of day for awhile. I hope you can spend a little time with them. If you ate at Red Ginger while we were operational, perhaps these photos will bring back some memories. If you didn’t have that chance, maybe these few shots will conjure up a feeling of what it might have been like for us on Team Ginger, a feeling of excitement, of possibilities, of putting it all on the line for a dream.

Saigon Salad – chicken, cabbage, cukes, peanuts.
Main Mein: with ground chicken, shiitakes, bamboo shoots, green onions.

Sauteed butterfish, crispy noodle cake, warm veggie salad (beans, water chestnuts, peppers), miso sauce.
Crispy banana-marshmallow wontons with chocolate fon-dip.
Adding a finishing touch to chicken potstickers.

Chilled tofu with cilantro sauce, chili paste, crispy bean threads.
Some sexy soju cocktail.

Baked Alaska with chocolate core.
Kung Pow Prawns with cashews and freshly ground Sichuan pepper.
I was a younger man then. Sigh.
