Another scrumptious sandwich for the Sandwich File. Today for lunch I made this very simple and quite yummy tuna fish sandwich on a toasted French roll with whole grain mustard, mayo, cheddar, tomato, Maui onion, and romaine lettuce. I’ve included the tuna fish salad recipe below. It’s not exactly mind-blowing, but the results were very pleasant indeed.
Basic Tuna Salad, My Way:
2 5-ounce cans of tuna (this time I used one can of white tuna and one can of chunk light tuna)
1 tablespoon minced celery
1 tablespoon minced celery leaf
1 tablespoon minced green onion (or chives)
1 tablespoon deli mustard
1/3 cup mayonnaise
juice of half a small Meyer lemon (other lemons will do)
about a 1/2 teaspoon of kosher salt
a few turns of the pepper grinder
Mix that all together and flake the tuna well with two forks, stirring as needed.
