This is just a simple thing I made a few days ago. Basically it’s stir-fried ground chicken (combination leg and breast) with some shiitakes, ginger, garlic, peanuts, scallions, a little hoisin, a little soy sauce, salt & pepper. Served it in this iceberg lettuce leaf with a sauce on the side made from sweetened black vinegar with some chili paste and fresh minced ginger. Came out very nice!
