Today’s Yummy Salad

Now that we’re home from Portland, post-wedding, Regina and I are attempting to eat clean and light for a while. Last night I made a salad of red-tinged butter lettuce, arugula, slices of beefsteak tomato, and Oaxacan string cheese with a dressing of lemon juice, country dijon mustard, honey, and extra virgin olive (a little s & p too, naturally). It was light and lovely.

Refreshing, delightful salad!
