Today’s Salad

This is a “kitchen sink” salad, meaning I threw everything possible into it. Arugula, iceberg lettuce, watercress, blanched kale, red cabbage, baby tomatoes, blanched baby green beans, shaved fennel, cucumber, red bell pepper, celery, cilantro, crushed macadamia nuts, crumbled goat cheese — all lightly dressing with a vinaigrette made of reduced orange juice, orange blossom vinegar, a bit of mustard, and extra virgin olive oil. Healthy and delightful!
