Lobster BLT!

Yes, it was as good as it looks!

Made this fabulous sandwich last night for a simple dinner. I whipped up this excellent lobster salad from some leftover boiled lobster (yesterday’s lunch) and put it on lightly buttered toasted Hawaiian bread with iceberg lettuce, some decent tomato, and some crisp-cooked, thinly-sliced hickory-smoked bacon. It was, in a word, bomb-tastic!

Lobster Salad:

2 cups chopped lobster meat (from 1 – 2 freshly cooked lobsters)
1/3 cup minced celery
1/4 cup thinly sliced scallions (green part only)
juice of 1/2 a large lemon
1/3 cup mayonnaise, preferably homemade
1 teaspoon yellow mustard
1/2 teaspoon ground black pepper
1/2 teaspoon kosher salt (more to taste if necessary)
1/4 teaspoon celery salt
pinch sugar

Mix all the ingredients until well-combined. Keep chilled until ready for sandwich assembly.
