Insalata Misto

It may not look like much, but it sure is tasty!

The Italian guest chefs are still here, cooking up a storm. Much of their food is hearty and soulful, not least of which are their salads. Salads like this one aren’t modern in any way (no frilly local greens or micro herbs) and they don’t really look like much, but they are delicious.

This mixed salad contains chopped cabbage, cauliflower, asparagus, cucumber, zucchini, radish, carrot, fennel, and a handful of fresh peas. The dressing is absolutely fresh ricotta cheese, white wine vinegar, and extra virgin olive oil. A little bit of salt completes the thing. It really is quite a lovely salad.
